Food for Your Soul

If you know me you know my chicken noodle soup. It is a staple in my household. It is filled with lots of good things, but most of all, it is filled with love. The recipe for my chicken noodle soup is mine. It is so simple. In fact, it is not a recipe at all. I roast two chickens and have a lovely meal with friends and family…a prerequisite. Then I strip the carcass, put the bones in a pot with onions, carrots,celery, leeks and garlic. I do not even bother to chop them. I simmer the whole lot on a very low heat for eighteen to twenty four hours. I strain the broth, add new vegetables, noodles, the leftover chicken and salt to taste. Thats it. I make sure I have a good old fashioned loaf of sour dough bread on hand with some lovely butter and I guess you know the rest.
The most important thing to remember when it comes to food is that we must celebrate it. Food is important not only for our body but for our soul. Celebrating each and every day and meal is something we have forgotten to do. So how about planning a roast dinner with friends and family and then serving up a lovely bowl of chicken noodle soup filled with love the next day? Sounds like an award winning formula to me.
